Conveyor ovens consist of a mechanically driven chain conveyor belt, a high heat bake chamber and oven impingement fingers that distribute the heated air below and above the food surface.
Many multinational chains utilize conveyor ovens to increase productivity and food quality such as Domino’s Pizza, Papa Johns and Hungry Howies.
Replacement parts for conveyor ovens consist of control panels with On/Off dial switches that control heat, blower and conveyor functions. Digital speed control, temperature control and axial cooling fans to keep the controls from overheating. Also High Limit controls, transformers, air switches that control gas burner inducement and ignition components for electronic spark ignition are located there too.
The gas train components consist of a basic gas pipe manifold system, gas pressure regulator, gas combination valves, modulating gas solenoid or high flame solenoid valve, gas burner blower motor, gas “in-shot” burner system for high BTU output and the electronic ignition pilot burner to insure energy efficiency and maximum heat production.
The oven body is unitized stainless steel angle frame construction covered in 300 series stainless steel to meet the requirements of the National Sanitation Foundation NSF. Replacements parts for the oven body consist of end plugs above and below the conveyor openings that are attached using thumb screws and are removable for easy cleaning or service access. The oven is equipped with a door that serves as a viewport or observation window to view baking while product is in the baking chamber or can be opened to add product to the ovens such as sandwiches and toasted subs. Other replaceable body components are the control panel door, rear access door and door safety switches.
The oven bake chamber consists of a dual blower system to circulate heated air from the gas burner blower and into the baking fingers. Some of these ovens are direct drive blower motors with blower wheels mounted directly onto the blower motor shaft while some models have a belt drive system employing a pillow block bearing and shaft system to circulate the heated air through the oven fingers.
The Finger system found in the bake chamber of the oven and consist of 4-6 fingers on top of the conveyor and under the conveyor. Fingers are constructed of aluminized steel and consist of a manifold plate an inner plate and an outer plate with holes for air circulation. Hole patterns for these outer plates are determined by chain bake specifications as well as the quantity of fingers in each oven. Fingers can be purchased as an assembly or by components. Usually chain operations have finger configurations designed to cook their products in a specific manner.
The conveyor is constructed of an aluminum flat stock frame and a series of shafts and cogged gears to drive the belt smoothly through the bake chamber. There is a main drive shaft and idler shaft, A DC powered drive motor digitally controlled to produce even bake speed. A stainless-steel wire chain link conveyor belt the can be replaced in its entirety or in one foot sections as needed.
